Method

  1. FriesCut potatoes into thick fries, soak, and double-fry: 150C for 6 minutes, then 190C until crisp.
  2. GravyCook butter and flour to a brown roux; whisk in stocks and simmer 10 minutes until thick.
  3. ToppingFry bacon and eggs.
  4. AssemblePile hot fries, scatter squeaky cheese curds and pour over hot gravy so the curds just soften.
