  • Beef fat or lard100 g
  • Beef stock, hot600 ml
  • Pumpkin, grated200 g
  • Salt2 tsp
  • Onion1
  • Red pepper1
  • Fresh cheese, cubed200 g
  • Paprika1 tsp

Method

  1. HusksSoak the husks in hot water 30 minutes.
  2. DoughCook the cornmeal and pumpkin in the fat, add the hot stock and salt and stir until a thick paste.
  3. FillingSoften the onion and pepper with paprika 10 minutes; each tamal gets a cube of cheese.
  4. WrapSpread dough on two husks, add filling, fold into a parcel and tie.
  5. BoilBoil 1 hour in salted water.
