
Sadza ne Nyama
Firm maize meal with slow-cooked beef stew.

Ingredients
- 3 cups Maize flour
- 800 g Beef
- 2 Onions
- 4 Tomatoes
- 4 cloves Garlic
- 4 tbsp Oil
- 2 tsp Salt
- 6 cups Water
Method
- Start the stew — Brown the beef hard in oil, then add onion and garlic.
- Simmer — Add tomatoes and water and cook 1½ hours until the meat is tender and the sauce thick.
- Make the porridge — Whisk a third of the maize flour into boiling water and cook 5 minutes.
- Thicken — Add the rest gradually, turning and pressing with a strong wooden spoon.
- Work it — Keep turning for 10 minutes until stiff and pulling away from the pot.
- Sadza is ready — Shape into a mound and serve with the stew, eating with the right hand.
