
Muhalla
Sweet yeasted flatbread cooked on a griddle and eaten with date syrup.

Ingredients
- 3 cups Flour
- 1½ cups Milk
- 1 Egg
- 4 tbsp Sugar
- 2 tsp Yeast
- 1 tsp Cardamom
- 1 pinch Saffron
- ½ tsp Salt
- 3 tbsp Ghee
- ¼ cup Date syrup
Method
- Make the batter — Whisk the flour, milk, egg, sugar, yeast, cardamom, saffron and salt into a thick pouring batter.
- Ferment — Cover and rest 90 minutes until risen and bubbly.
- Heat the griddle — Warm a flat pan over medium heat and wipe with ghee.
- Cook — Pour a ladle and spread into a thick round; cook until the top sets and holes form, then turn once.
- Muhalla is ready — Brush with ghee and serve warm with date syrup.
