
Luqaimat
Crisp golden dough dumplings soaked in date syrup and sesame.

Ingredients
- 2 cups Flour
- 1 tsp Yeast
- 1 tbsp Sugar
- 1 tsp Cardamom
- 1 pinch Saffron
- 1½ cups Warm water
- 2 tbsp Cornstarch
- 3 cups Frying oil
- ½ cup Date syrup
- 1 tbsp Sesame seeds
Method
- Make the batter — Whisk the flour, cornstarch, yeast, sugar, cardamom and saffron with warm water into a thick, sticky batter.
- Let it rise — Cover the bowl and leave it in a warm place for 1 hour until bubbly and doubled.
- Heat the oil — Heat the frying oil to 180°C — a drop of batter should rise and sizzle immediately.
- Fry the dumplings — Drop small spoonfuls of batter into the oil and fry, turning, until deep golden and crisp all over.
- Drain and dress — Lift onto paper, then drizzle generously with date syrup.
- Luqaimat is ready — Scatter with sesame seeds and serve warm while still crisp.
