
Jabab
Thin saffron pancakes cooked lacy on one side.

Ingredients
- 2 cups Flour
- 2 cups Milk
- 1 Egg
- 3 tbsp Sugar
- 1 tsp Yeast
- 1 pinch Saffron
- 1 tsp Cardamom
- ½ tsp Salt
- 2 tbsp Butter
Method
- Make the batter — Whisk the flour, milk, egg, sugar, yeast, saffron, cardamom and salt into a thin batter.
- Ferment — Cover and leave 1 hour until bubbles rise to the surface.
- Heat the pan — Get a flat griddle hot and wipe it with butter.
- Cook one side — Pour a ladle and swirl thin; cook until the surface fills with tiny holes and sets — jabab is never flipped.
- Jabab is ready — Fold in quarters and serve with cream cheese, date syrup or honey.
