Ingredients
- ¾ cup Short-grain rice
- 6 cups Milk
- 1 cup Sugar
- 2 tbsp Cornstarch
- 1 tsp Vanilla extract
- 1½ cups Water
- 1 tsp Cinnamon
Method
- Cook the rice — Simmer the rice in the water until it absorbs completely and turns very soft.
- Add milk — Pour in the milk and cook 30 minutes over low heat, stirring often.
- Sweeten and thicken — Add sugar, then the cornstarch slaked in cold milk, and cook until it coats a spoon.
- Fill the dishes — Pour into individual clay bowls.
- Scorch the top — Set the bowls in a tray of water and bake at 220°C until the surface blisters brown — that scorched skin is the whole point.
- Sütlaç is ready — Chill completely and serve cold with cinnamon.
