
Cheese Fondue
Melted alpine cheese with white wine, for dipping bread.

Ingredients
- 400 g Melting alpine cheese
- 400 g Swiss-style cheese
- 1½ cups White wine
- 2 cloves Garlic
- 2 tbsp Cornstarch
- 1 tbsp Lemon juice
- ½ tsp Nutmeg
- 1 tsp Black pepper
- 1 loaf Crusty bread
Method
- Prepare the pot — Rub the inside of a heavy pot all over with a cut garlic clove.
- Warm the wine — Heat the wine with lemon juice until steaming but never boiling.
- Add cheese slowly — Toss the grated cheeses with cornstarch, then add a handful at a time, stirring in a figure-eight until each melts before adding more.
- Season — Grate in nutmeg and pepper.
- Keep it moving — Never let it boil — it must stay smooth and just barely bubbling.
- Fondue is ready — Set over a burner and dip cubes of crusty bread, stirring as you go.
