Spiced minced meat baked under a savoury egg custard.

Ingredients
- 800 g Ground beef
- 2 Onions
- 2 Bread slices
- 1½ cups Milk
- 2 tbsp Curry powder
- 1 tsp Turmeric
- 2 tbsp Apricot jam
- ½ cup Raisins
- ¼ cup Almonds
- 3 Eggs
- 4 Bay leaves
- 2 tbsp Vinegar
- 2 tsp Salt
Method
- Soak the bread — Soak the bread in half the milk, then squeeze it out and keep the milk.
- Cook the base — Fry the onions until soft, add the curry powder and turmeric and cook 2 minutes.
- Brown the meat — Add the beef and cook until it loses its raw colour, breaking up any lumps.
- Season — Stir in the soaked bread, jam, raisins, almonds, vinegar and salt.
- Fill the dish — Press the mixture into a baking dish and tuck bay leaves into the surface.
- Make the custard — Beat the eggs with the reserved milk and pour it over the top.
- Bake — Bake at 180°C for 40 minutes until the custard sets and turns golden.
- Bobotie is ready — Rest 10 minutes and serve with yellow rice.
