Ingredients

Method

  1. Soak the bread — Soak the bread in half the milk, then squeeze it out and keep the milk.
  2. Cook the base — Fry the onions until soft, add the curry powder and turmeric and cook 2 minutes.
  3. Brown the meat — Add the beef and cook until it loses its raw colour, breaking up any lumps.
  4. Season — Stir in the soaked bread, jam, raisins, almonds, vinegar and salt.
  5. Fill the dish — Press the mixture into a baking dish and tuck bay leaves into the surface.
  6. Make the custard — Beat the eggs with the reserved milk and pour it over the top.
  7. Bake — Bake at 180°C for 40 minutes until the custard sets and turns golden.
  8. Bobotie is ready — Rest 10 minutes and serve with yellow rice.
