
Kilishi
Thin spiced dried beef, chewy and intensely seasoned.

Ingredients
- 1 kg Beef
- 1 cup Peanuts
- 2 tbsp Ginger
- 6 cloves Garlic
- 2 tbsp Chili powder
- 1 tbsp Onion powder
- 1 tbsp Salt
- 1 cup Water
- 3 tbsp Oil
Method
- Slice paper-thin — Cut the beef into sheets as thin as possible against the grain.
- First drying — Spread on racks and dry in the sun or a low oven for several hours until leathery.
- Make the paste — Blend the peanuts, ginger, garlic, chili, onion powder and salt with water into a thick slurry.
- Coat — Dip each dried sheet in the paste until saturated.
- Second drying — Dry again until firm.
- Roast — Finish briefly over low coals to toast the coating.
- Kilishi is ready — Cool and store airtight; it keeps for weeks.
