
Dal Bhat Tarkari
Lentils, rice and vegetable curry — the everyday Nepali plate.

Ingredients
- 1½ cups Yellow lentils
- 2 cups Rice
- 3 Potatoes
- 1 Cauliflower
- 1 Onion
- 2 Tomatoes
- 4 cloves Garlic
- 1 tbsp Ginger
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- ½ tsp Fenugreek seeds
- 3 tbsp Ghee
- 2 tsp Salt
- 5 cups Water
Method
- Cook the dal — Simmer the lentils with turmeric, garlic and salt for 30 minutes until collapsing.
- Temper — Fry cumin and fenugreek seeds in ghee until they darken, then pour the sizzling ghee into the dal.
- Make the tarkari — Fry the onion, ginger and garlic, add potato and cauliflower with turmeric and cook covered 20 minutes.
- Steam the rice — Cook the rice separately until fluffy.
- Dal Bhat is ready — Serve rice in the centre with dal poured over and the vegetable curry beside it.
