Steamed dumplings of mutton and onion, eaten at the new year.

Ingredients
- 4 cups Flour
- 1¼ cups Water
- 700 g Ground mutton
- 2 Onions
- 4 cloves Garlic
- 1 tsp Caraway seeds
- 1 tsp Black pepper
- 2 tsp Salt
- ½ cup Water for filling
Method
- Make the dough — Knead the flour, water and salt into a firm dough and rest 30 minutes.
- Make the filling — Mix the mutton with finely chopped onion, garlic, caraway, salt, pepper and enough water to make it loose and juicy.
- Roll — Cut the dough into pieces and roll each into a thin disc, thicker in the centre.
- Pleat — Fill and pinch the edge around into a small open-topped purse.
- Steam — Oil the steamer, arrange without touching, and steam 20 minutes.
- Buuz are ready — Serve very hot, eaten by hand with hot tea.
