Ingredients

Method

  1. Cook the meat — Simmer the lamb with onion, cinnamon and salt for 1 hour, keeping the broth.
  2. Fry the vegetables — Fry the sliced eggplant, cauliflower and potato separately until golden, then drain.
  3. Layer the pot — Arrange the fried vegetables neatly across the base of a heavy pot, then the meat, then the soaked rice with baharat.
  4. Add broth — Pour the hot strained broth over until it covers the rice by a finger.
  5. Cook — Bring to a boil, then cover and cook on the lowest heat for 30 minutes.
  6. Rest — Leave off the heat, covered, for 15 minutes — flipping too early makes it collapse.
  7. Maqluba is ready — Place a platter over the pot and invert in one confident movement.
