Laos Plantain Coconut Bake (Flourless Muffin)

Ingredients

• 450ml Coconut Cream
• 4 large Plantain
• 4 tablespoons Sugar

Method

1. Preheat the oven — Preheat oven to 350 degrees. Mash the plantains until it has a paste consistency.
2. Mix together — Mix togher the coconut cream and granulated sugar. Mix well.
3. Mix together — Add muffin liners to muffin pan. Fill the mixture into muffin pan.
4. Bake — Bake for 45 minutes until baked all the way through.
