
Ghanaian Jollof
Fragrant tomato rice cooked in rich stew base.

Ingredients
- 3 cups Long-grain rice
- 5 Tomatoes
- 2 Red bell peppers
- 1 Scotch bonnet
- 2 Onions
- 3 tbsp Tomato paste
- 3 cups Chicken stock
- ½ cup Oil
- 1 tbsp Ginger
- 4 cloves Garlic
- 2 Bay leaves
- 2 tsp Salt
Method
- Blend the base — Blend the tomatoes, peppers, scotch bonnet, ginger and garlic until smooth.
- Fry the paste — Cook the onion in oil, add tomato paste and fry 3 minutes.
- Reduce — Add the blended mixture and cook 20 minutes until thick and the oil rises.
- Add rice — Stir in the washed rice with the stock, bay leaves and salt.
- Steam low — Cover tightly and cook on the lowest heat for 30 minutes without lifting the lid.
- Jollof is ready — Rest 5 minutes, fluff gently and serve.
