
Pupusas
Thick corn cakes stuffed with cheese and beans, griddled.

Ingredients
- 3 cups Corn dough flour
- 2½ cups Warm water
- 300 g Fresh white cheese
- 1½ cups Red beans
- 200 g Pork
- 400 g Cabbage
- 1 Carrot
- ½ cup Vinegar
- 1 cup Tomato sauce
- 2 tsp Salt
- 2 tbsp Oil
Method
- Make the curtido — Blanch the shredded cabbage and carrot, then pack in vinegar with salt and leave at least 3 hours.
- Make the dough — Mix the corn flour with warm salted water into a soft, non-cracking dough.
- Prepare fillings — Mash the beans into a paste; grind the cooked pork; grate the cheese.
- Shape — Take a ball of dough, press a hollow, fill, and close it completely, then flatten gently between wet palms.
- Griddle — Cook on a hot dry pan for 4 minutes a side until spotted and slightly puffed.
- Pupusas are ready — Serve with curtido and warm tomato sauce.
