Ingredients

Method

  1. Make the curtido — Blanch the shredded cabbage and carrot, then pack in vinegar with salt and leave at least 3 hours.
  2. Make the dough — Mix the corn flour with warm salted water into a soft, non-cracking dough.
  3. Prepare fillings — Mash the beans into a paste; grind the cooked pork; grate the cheese.
  4. Shape — Take a ball of dough, press a hollow, fill, and close it completely, then flatten gently between wet palms.
  5. Griddle — Cook on a hot dry pan for 4 minutes a side until spotted and slightly puffed.
  6. Pupusas are ready — Serve with curtido and warm tomato sauce.
