
Mangú
Mashed green plantain topped with pickled red onion.

Ingredients
- 4 Green plantains
- 2 Red onion
- ¼ cup Vinegar
- 3 tbsp Butter
- 2 tsp Salt
- ½ cup Cold water
- 2 tbsp Oil
Method
- Boil the plantains — Peel and boil the green plantains in salted water for 20 minutes until very soft.
- Mash immediately — Mash while hot with butter, adding cold water a splash at a time until smooth and creamy — cold water is the trick to a silky mash.
- Pickle the onion — Sauté the sliced onion briefly, then add vinegar and salt and take off the heat.
- Mangú is ready — Mound the mash and pile the pickled onion on top; serve with fried cheese, salami and egg.
