
Bandeja Paisa
The vast Antioquian platter — beans, rice, pork, egg, plantain and arepa.

Ingredients
- 2 cups Red beans
- 300 g Pork belly
- 400 g Ground beef
- 3 cups Cooked rice
- 4 Eggs
- 2 Ripe plantains
- 4 Chorizo
- 1 Onion
- 2 Tomatoes
- 4 cloves Garlic
- 1 Avocado
- 2 tsp Salt
Method
- Cook the beans — Soak the beans overnight, then simmer with onion, garlic and a piece of pork for 2 hours until soft and soupy.
- Crisp the pork — Score the pork belly, salt it, and fry or roast until the skin blisters and crackles.
- Cook the beef — Fry the ground beef with tomato, onion and garlic until browned and dry.
- Fry the plantain — Slice the ripe plantains and fry until caramelised at the edges.
- Cook the rest — Grill the chorizo and fry the eggs sunny side up.
- Bandeja Paisa is ready — Arrange everything on one large platter with rice, avocado and an arepa.
