
Kanda ti Nyma
Meatballs in a rich groundnut and tomato sauce.

Ingredients
- 700 g Ground beef
- 1 cup Peanut butter
- 4 Tomatoes
- 2 Onions
- 5 cloves Garlic
- 2 Chili
- 1 Eggs
- ½ cup Breadcrumbs
- ¼ cup Palm oil
- 2 tsp Salt
- 4 cups Water
Method
- Make the meatballs — Mix the beef with egg, breadcrumbs, half the onion, garlic and salt and roll into balls.
- Brown — Sear the meatballs in palm oil until coloured all over, then lift out.
- Build the sauce — Cook the remaining onion, tomato and chili until pulpy.
- Loosen the peanut butter — Whisk it with hot water until pourable before adding — added neat it seizes.
- Simmer — Add the peanut liquid and cook 25 minutes until the oil rises.
- Return the meatballs — Cook gently a further 20 minutes.
- Kanda ti Nyma is ready — Serve with rice or cassava.
