Firm millet or maize paste eaten with okra sauce.

Ingredients
- 3 cups Millet flour
- 6 cups Water
- 300 g Okra
- 1 Onion
- 2 Tomatoes
- 100 g Dried fish
- 2 tbsp Peanut butter
- 2 tsp Salt
- 3 tbsp Oil
Method
- Make a slurry — Mix a cup of the millet flour with cold water until smooth.
- Cook the base — Pour into boiling salted water and cook 10 minutes.
- Thicken — Add the rest of the flour gradually while turning hard with a wooden spoon.
- Work it — Keep folding 10 minutes until stiff and smooth, then shape into a dome.
- Make the sauce — Cook the sliced okra with onion, tomato, dried fish and peanut butter until thick and slippery.
- Tô is ready — Serve the dome with the okra sauce for dipping.
