
Begova Čorba
Bey's soup — creamy chicken and okra with root vegetables.

Ingredients
- 1 kg Chicken
- 200 g Okra
- 2 Carrots
- 1 Parsley root
- 1 stalk Celery
- 1 Potato
- 3 tbsp Flour
- 4 tbsp Butter
- ¾ cup Cream
- 1 Egg yolk
- 2 tbsp Lemon juice
- 2 tsp Salt
- 8 cups Water
Method
- Poach the chicken — Simmer the chicken with salt for 1 hour, then shred the meat and strain the broth.
- Cook the vegetables — Cook the diced root vegetables in the broth until tender.
- Add okra — Add the okra and cook 10 minutes.
- Make the roux — Cook the flour in butter until pale, then whisk in hot broth to thicken the soup.
- Temper — Beat the cream with the egg yolk, add a ladle of hot soup, then stir it back in off the boil.
- Begova Čorba is ready — Return the chicken, sharpen with lemon, and serve.
